Here is some perfect healthy lunch inspiration for when you fancy something that is healthy, but tastes absolutely delicious. This is my kind of salad, the dressing is zingy but has the irresistible taste of peanut butter.
For the cooked chicken, I buy the whole roast chickens from the hot deli counter at the supermarket, but you could cook a piece of chicken, buy cooked or use leftovers, whatever is easiest for you. This recipe packs a punch, so it will feel like a right treat, even though it’s full of goodness.
Sriracha Chicken & Peanut Salad Bowl
Ingredients (serves two)
200g cooked chicken breast
2 tbsp creme fraiche (I used half fat)
1 tsp sriracha (I used Flying Goose)
Zest of 1 lime
100g lettuce leaves
1 red pepper, thinly sliced
1 avocado, split and sliced
6 radishes, thinly sliced
2 tbsp roasted, salted peanuts
Small handful fresh coriander, chopped
For the dressing:
2 tsp smooth peanut butter (I used Meridian)
1 tsp light soy sauce
1 tbsp honey
2 tsp sriracha
Juice of half a lime
Method
1. Make the dressing by combining all the dressing ingredients together and stirring to combine. Set aside. In another bowl, mix together the creme fraiche, the sriracha and the lime zest. Get all your veggies sliced and you are ready to assemble. It is THAT easy.
2. Mix the sriracha creme fraiche mix with the cooked chicken. Add it to your bowl with the veggies, then spoon over the dressing. Finish with a scattering of peanuts and some fresh coriander. Dig in. Who said healthy had to be boring?
