Chicken & Halloumi Burger

On a sunny day back in May, I got the notion for a Nando’s style chicken burger and it 100% hit the spot, plus it was so quick and easy to put together. If you fancy recreating a taste of Nando’s in your own kitchen, then I highly recommend you give this one a go! Nando’s Style Chicken & Halloumi Burger

Ingredients (makes two burgers)
1 large chicken breast
3-4 tbsp @nandosuk Medium Marinade (or whichever Nando’s marinade you prefer)
2 large slices of halloumi
1 jarred roast red pepper, sliced
Handful of lettuce, shredded
2 brioche buns
2 tbsp Nando’s Perinaise (I went for Hot)
Salt & pepper

Method
1. Start by placing your large chicken breast between some clingfilm and bash it with a rolling pin until it’s about 1cm thick. Cut the chicken into two pieces, season with salt and pepper and place in a dish with the Nando’s marinade. Cover and place in the fridge for at least one hour, the longer the better.
2. When ready to cook, place a large griddle or non-stick pan on over a medium-high heat and toast your brioche buns for a couple of minutes, then set aside. Add a little oil to the pan, then add your chicken pieces and cook for five minutes. After the five minutes, flip the chicken over and add the halloumi to the other side of the pan, then cook everything for a further five minutes, turning the halloumi halfway through.
3. Time to assemble! Add the Perinaise to the buns, along with the lettuce and the red pepper. Top with the chicken and halloumi and dig in!
